A Clearer Look at MTHFR & Spinach

Hey Everyone!

Earlier this year, I shared a Newsletter titled “Why Spinach Matters for MTHFR.” After revisiting it, I realized there was an opportunity to make the explanation even clearer and more complete — especially when it comes to how our Spinach Juice Powder supports methylation and those with MTHFR variations.

So I went back, refined the material, and expanded on the most important points to make the science easier to understand and more actionable. And as you’ll see below, this deeper explanation fits perfectly into what we’ve been uncovering about the remarkable power of our truly raw juice powders.

Over the past several months, we’ve dived deep into the impressive benefits of many of our truly raw juice powders.

For example, our Beet Juice Powder is packed with betalains, betaine, and nitrates. Our Kale Juice Powder delivers a potent blend of lutein, kaempferol, quercetin, vitamin C, calcium, magnesium, and vitamin K. And our Broccoli Juice Powder naturally abundant in indole-3-carbinol (I3C) and sulforaphane.

Throughout these newsletters, I’ve often pointed out things like the top food after kale for lutein is spinach… that beets rank among the highest raw vegetables for nitrate content — alongside spinach… and that beets are the world’s leading vegetable source of betaine — right there again with spinach.

Spinach just keeps showing up as a powerhouse source of a wide range of nutrients and bioactive compounds. It also has a crazy amount of natural folate (methylfolate), iron, and chlorophyll — plus zeaxanthin, magnesium, potassium, kaempferol, quercetin, and vitamin C.

It just shines nutritionally from so many different angles. But one of the most overlooked reasons spinach is so valuable — especially as we age — is its powerful support for the MTHFR gene and healthy methylation — something very few foods can claim.

If you’ve ever heard of the MTHFR gene — and why it matters for heart, brain, and methylation health — spinach may be one of the most important foods you can consume.

To understand why this is so critical, it helps to know what the MTHFR gene actually does. The MTHFR enzyme is responsible for converting folate into its active form — methylfolate — which is required to recycle the amino acid homocysteine back into methionine.

When someone has an MTHFR gene variation, this conversion process becomes less efficient. As a result, methylfolate production slows, methyl donation decreases, and homocysteine begins to build up in the bloodstream.

Elevated homocysteine is considered a major risk factor for heart attacks and cardiovascular events, as it can damage blood vessel linings, promote clot formation, and accelerate arterial plaque buildup. This is why nutrients that help clear homocysteine — or provide alternate pathways for doing so — become critically important.

Spinach is one of the richest natural sources of two critical methylation nutrients. Spinach is the top food of betaine—right alongside beets. Even more remarkable, it also happens to be the richest plant source of natural folate (methylfolate) on the planet — the exact form required for proper MTHFR function.

When you concentrate spinach into a truly raw juice powder, these two critical methylation nutrients don’t just remain — they become dramatically more impactful.

Betaine is a rare compound that converts the harmful amino acid homocysteine into methionine, which then transforms into SAMe (S-adenosylmethionine). Spinach Juice Powder’s betaine takes a harmful compound (homocysteine) that damages your heart and brain and converts it into SAMe — a powerhouse nutrient that supports mood, detox, joint health, hormone balance, and even DNA repair.

This is especially important for those with MTHFR gene variations, because betaine provides an alternate methylation pathway (known as the BHMT pathway) for clearing homocysteine when the folate-dependent MTHFR pathway isn’t working optimally.

And here’s where it becomes even more remarkable: while betaine supports methylation through the backup BHMT pathway, spinach simultaneously delivers the primary fuel for the folate-dependent pathway — its naturally occurring methylfolate.

This is where natural methylfolate becomes critical. It is the exact biologically active form required for proper MTHFR function, working by directly donating the methyl group needed to convert homocysteine back into methionine. When the MTHFR gene is not functioning efficiently, the body cannot convert folate into adequate amounts of methylfolate. That means fewer methyl groups are available to keep homocysteine under control. This is where spinach becomes so valuable — because it supplies natural methylfolate directly from food, helping to restore the methyl groups that may not be produced efficiently inside the body.

What’s truly remarkable is that spinach doesn’t just contain one supportive compound for this pathway — it contains two key living nutrients. It delivers natural betaine to provide an alternate methylation route and natural methylfolate to directly nourish the folate-dependent pathway itself.

That’s why spinach’s rare combination of natural betaine and methylfolate is so important: it converts damaging homocysteine into SAMe, a vital nutrient, while the natural methylfolate directly donates the methyl group required to convert homocysteine back into methionine — restoring healthy SAMe production and keeping the entire methylation cycle functioning properly. Because methylation governs everything from DNA repair and neurotransmitter production to cardiovascular and brain health, having access to both natural betaine and bioactive methylfolate in one food is extraordinarily rare.

And while that dual-pathway methylation support alone makes spinach extraordinary, it’s only one dimension of what this plant can do.

Remember, spinach—alongside beets—is one of the top foods in the world for delivering natural nitrates and betaine. These compounds have a massive impact on blood flow, cardiovascular health, and even brain and muscle function. Nitrates are converted in the body to nitric oxide, which relaxes blood vessels, improves circulation, and lowers blood pressure. This vasodilation also enhances oxygen delivery to the brain—potentially reducing the risk of cognitive decline—and increases blood flow to muscles, supporting post-workout recovery and reducing soreness, especially in older adults. Nitric oxide even mimics the effects of medications like Viagra by improving blood flow in cases of erectile dysfunction. And when it comes to athletic performance, nitric oxide improves mitochondrial function and reduces inflammation—helping with both endurance and recovery.

Spinach is also an excellent natural source of lutein and zeaxanthin, and several clinical studies [1], [2], [3], [4], [5] demonstrate that the carotenoids in spinach support eye health by increasing macular pigment density and helping protect against age-related macular changes. They act as antioxidants and filter harmful blue light, reducing oxidative stress in the retina. Including our Spinach Juice Powder in your daily routine provides a valuable natural source of lutein and zeaxanthin to help maintain healthy vision as you age.

Not only is spinach rich in chlorophyll, it is also naturally abundant in thylakoid membranes — the internal membrane structures within plant cells where chlorophyll resides. What truly distinguishes spinach is its unusually high concentration of these intact thylakoid membranes, especially when carefully preserved.

Compared to single-celled algae like chlorella or grasses such as wheatgrass, spinach leaves provide a far denser and more studied source of intact thylakoid membrane fractions — which is precisely why most of the research on thylakoids and appetite regulation has focused specifically on spinach.

Nutritionally, these membranes function as more than just structural plant components. When kept intact, spinach thylakoids have been shown to slow fat digestion in the small intestine and enhance satiety signaling — effects that support healthier appetite control and long-term weight management.

Here’s where the clinical research gets especially compelling:

Across five clinical studies [1], [2], [3], [4], [5], a specially processed spinach powder that preserves its natural thylakoid membranes was shown to profoundly impact hunger, cravings, and metabolism.

Thylakoids lowered ghrelin (the hunger hormone) by up to 30%, while increasing key satiety hormones like CCK and GLP-1 by 26–50%. Cravings for sweets and salty snacks dropped by as much as 95%, with appetite control beginning within hours of use. In the 12-week trial, participants experienced a 43% greater reduction in body mass compared to the control group — without stimulants or reported side effects.

But the effects extend well beyond satiety.

Thylakoids temporarily slow fat digestion by inhibiting lipase — the enzyme responsible for breaking down dietary fats. This naturally delays nutrient absorption, helping prevent sharp spikes in blood sugar and insulin that can drive energy crashes, cravings, and fat storage. By slowing digestion in a controlled way, thylakoids give your brain more time to register fullness — reinforcing hormonal appetite signals while supporting steadier energy and metabolic balance.

The spinach preparation used in these studies was produced through mechanical disruption — essentially blending whole spinach leaves with water and removing insoluble fiber before drying.

Our Spinach Juice Powder is produced differently.

LiquaDry’s proprietary BioActive Dehydration technology is specifically designed to preserve delicate thylakoid membranes along with the plant’s broader spectrum of bioactive compounds — maintaining their structural integrity in a truly raw, concentrated form.

As a result, just one teaspoon of our Spinach Juice Powder provides thylakoid levels comparable to — or exceeding — those used in the clinical trials, while also delivering spinach’s full range of nutrients including lutein, zeaxanthin, betaine, nitrates, methylfolate, chlorophyll, and iron.

It takes approximately 35 kilograms of fresh spinach to produce just 1 kilogram of this juice powder — a 35:1 concentration of the plant’s vital compounds in every spoonful.

And one more thing that often surprises people…

This is genuinely one of the best-tasting green juice powders available.

When you juice or blend fresh spinach, you may notice a creamy foam that emerges. That characteristic doesn’t disappear when it’s transformed into a juice powder — it actually becomes more concentrated. The powder become more light and fluffy compared to other green juice powders, and carries a subtle, fresh green flavor with a mild creaminess that makes it incredibly easy to enjoy daily.

No harsh grassy aftertaste. No bitterness. Just clean, vibrant spinach in its most concentrated form.

When you step back and look at the full picture, spinach stands in a category of its own. It supports healthy methylation through its rare combination of natural betaine and bioactive methylfolate — helping those with MTHFR variations maintain balanced homocysteine and optimal SAMe production. It delivers concentrated plant-based iron for oxygen transport, natural nitrates for circulation and nitric oxide support, lutein and zeaxanthin for eye protection, and intact thylakoid membranes shown to influence appetite and metabolic balance. And with a powerful 35:1 concentration, you’re not just getting spinach — you’re getting an amplified, truly raw spectrum of its most valuable compounds in every teaspoon.

That’s why this isn’t just another green powder.

It’s a comprehensive, concentrated way to nourish your cardiovascular system, brain, metabolism, and methylation pathways — all from one remarkable plant.

Thanks everyone for your support!

Sincerely,
Matt
