Hey everyone! These dehydrated Peruvian olives are some of the tastiest, healthiest olives you’ll find anywhere. They have a super strong, addictive flavor that takes a salad to an entirely new level. There aren’t too many grandeur flavors in the raw food world – this is definitely one of them. As our customer Doug put it, “They are the caviar of olives!”
1. Dehydrated Botija Olives
Olivico slowly dehydrates their pitted Botija olives at just 104°F, which concentrates the flavor into something rich, salty and savory with a delicious oily texture. They’re certified organic and 100% raw, in three flavors: Herbed, Sea Salt and Aji (chili). → See The Best Raw Foods.
2. The Olivico Farm
This small family farm just off the coast of Peru has been growing olives since 1990. The water, air and land are remarkably pure, and animals roam wild among lush mountains. They use no pesticides, insecticides, herbicides or other agrochemicals. Pests are handled ecologically with beneficial insects, light traps, capture mechanisms and repellent bio-oils made right on the farm from olive extract, olive leaf and olive oil. Olivico also makes an award-winning extra virgin olive oil.
3. Naturally Fermented Mixed Olives
These are unlike any of our other olives. They’re fermented with only sea salt, not in a traditional brine. As the olives touch the salt, they release some of their own water, so the liquid only comes about halfway up the jar and the olives look a bit shriveled – that’s normal, not a leak. The olives are grown with the farm’s own underground spring water from the Andes, which filters through the earth. So the liquid in the jar is the mineral-rich water released from the olives themselves. How crazy is that?!
4. Green Sevillano Olives
Olivico’s Green Sevillano olives come in brine, packed in glass jars.
How to Enjoy Them
Toss the dehydrated olives into salads, or just eat them straight from the bag – they’re that good. The jarred olives make an easy appetizer, and Olivico’s olive pastes are great on crackers or as a pizza or pasta base.
